Indulge in a lighter, yet rich and flavorful twist on the classic butter chicken, made with creamy Greek yogurt for a tangy depth that perfectly complements the aromatic spices
Ingredients
chicken marinade
- 4 chicken breasts, cut into bite sized pieces
- 2 tsp salt
- 6 garlic cloves, minced
- 2 tsp garam marsala
- 2 tbsp smoked paprika
- 1 tsp tumeric
- 1 cup lactose-free greek yogurt
- 1 tbsp ginger, grated
- 2 tbsp fresh lemon juice
butter sauce
- 4 tbsp plant butter
- 1 sweet onion, diced finely
- 1 tsp garam marsala
- 1 tbsp smoked paprika
- 1/2 tsp tumeric
- 8 oz cherry or grape tomatoes, halved
- 3 tbsp lactose-free greek yogurt
- 1/4 cup cashews, roasted, unsalted
Instructions
- In a large mixing bowl, combine the chicken chunks with all the marinade ingredients. Let it sit for at least 30 minutes, or overnight for the best flavor.
- Heat butter* in a large skillet or wok over medium-high heat. Once melted, add the marinated chicken and cook for 5 minutes on one side. Flip the chicken and cook for an additional 3 minutes.
- Remove the chicken from the pan and set aside. Repeat with the second batch.
- In the same pan, add the onion, tomatoes, spices, and cashews. Cook for about 4 minutes until softened. Stir in the Greek yogurt and cook for another 1-2 minutes.
- Turn off the heat and let the mixture cool slightly before transferring to a high-powered blender. Blend until smooth and creamy.
- Return the chicken to the skillet over low heat and pour the sauce over it. Stir to coat and season with sea salt and cracked black pepper to taste. Serve with fresh cilantro.
Notes
*depending on the size of your skillet, you may need to cook in batches. don't overcrowd your pan and split the chicken mixture into two. use 2 tbsp of butter for the 1st batch, and the remaining 2 tbsp of butter for the 2nd batch of chicken.
