delight in the creamy richness of my light lactose-free broccoli cheese soup! it's the perfect balance of tender broccoli with the comforting creaminess of cheddar cheese.

Ingredients

Instructions

  1. in a dutch oven, add 1 tbsp butter. once melted, add chopped onion and saute for 4-5 minutes until translucent and almost browned. add minced garlic and stir around for 1-2 minutes, being careful not to burn. remove from pot and set aside.
  2. over low heat, add remaining 4 tbsp butter to that same dutch oven. once melted, add flour and whisk continuously for 4-5 minutes.
  3. slowly pour in vegetable stock and continue whisking until combined.
  4. slowly pour in plant cream and continue whisking until combined; increase heat.
  5. once boiling, add broccoli, carrots, sautéed onions & garlic, and seasonings to the pot and simmer for 15 - 20 minutes.
  6. now add most of the cheese, reserving a little for garnish.
  7. using an immersion blender, blend until your desired consistency***.
  8. enjoy smooth or chunky (see notes!)

Notes

*fresh broccoli works best! you can use frozen, but you'll want to make sure it is thawed and dried as much as possible to prevent mushy veggies and/or watery soup.

 

**buy your cheese in block form and shred it by hand. don't use pre-shredded cheese here as it can become stringy and clumpy.

 

***you can let the soup cool and use your blender, or you can use an imersion blender and blend it right in the pot. I like it half chunky half smooth. if your call though!
