Seared Salmon Cakes

golden-brown seared salmon cakes, packed with flaky salmon and aromatic herbs, a mouthwatering delight in every bite!]/
Ingredients
- 1 lb finely minced salmon
- 1/2 cup whole wheat breadcrumbs
- 1 tbsp light mayo
- 1 tbsp whole grain mustard
- 1 whole egg, beaten
- 1 tsp seafood seasoning
- 1 tbsp coconut aminos
- 2 tbsp fresh dill, minced
- 2 cloves garlic, minced
- 1 lemon, zested
- 1 stalk green onion, chopped
- 1 tsp sea salt
- cracked black pepper to taste
- 2 tbsp plant butter
- 2 tbsp grapeseed oil
Instructions
- in a large mixing bowl, add all ingredients (expect butter and oil) and mix until just combined. form salmon mixture into patties; i can usually make about 15ish total.
- in a large non-skillet set to medium high heat, add 1 tbsp butter and 1 tbsp oil. add as many cakes as you can without overcrowding the pan. let them cook for 1 min and 30 secs - 2 min at the most, then flip.
- repeat the 2nd batch starting with the remaining butter and oil
- top finished cakes with a dollop of lactose-free greek yogurt, a sprig of fresh dill, and tiny lemon wedge
