Ingredients

  • 2 cups cubed or shredded chicken breast
  • 2 whole ripe & ready *avocados, cubed
  • 1 cup sautéed sweet corn
  • 5 grape tomatoes, quartered
  • 1/3 cup fresh cilantro, minced finely
  • 1/4 cup green onion, chopped finely
  • 4 sliced cooked bacon, crumbled
Lemon Dressing
  • 3 tbsp fresh lemon juice
  • 3 tbsp olive oil
  • 1/2 tsp garlic salt blend
  • 1/4 tsp cracked pepper

Instructions

  1. whisk dressing ingredients together
  2. drizzle dressing over salad ingredients and toss to coat
  3. once chilled, grab your chips!

Notes

*make sure your avocados are RIPE cause the acid in the lemon juice will help break them down and give this salad/dip the creaminess it needs.
