Bacon Avocado Chicken Salad

Ingredients
- 2 cups cubed or shredded chicken breast
- 2 whole ripe & ready *avocados, cubed
- 1 cup sautéed sweet corn
- 5 grape tomatoes, quartered
- 1/3 cup fresh cilantro, minced finely
- 1/4 cup green onion, chopped finely
- 4 sliced cooked bacon, crumbled
Lemon Dressing
- 3 tbsp fresh lemon juice
- 3 tbsp olive oil
- 1/2 tsp garlic salt blend
- 1/4 tsp cracked pepper
Instructions
- whisk dressing ingredients together
- drizzle dressing over salad ingredients and toss to coat
- once chilled, grab your chips!
Notes
*make sure your avocados are RIPE cause the acid in the lemon juice will help break them down and give this salad/dip the creaminess it needs.
