BBQ Bacon Turkey Meatloaf

a weeknight hit! light, yet flavorful and filling. oh, and bacon🥓
Ingredients
- 1 lb ground turkey (i use 93% lean)
- 4 slices bacon, cooked, diced
- 1 tbsp worcestershire sauce
- 1 tbsp bbq sauce
- 1/4 cup red bell pepper, minced
- 1/2 cup onion, minced
- 2 small cloves garlic, minced
- 1 tbsp olive oil
- 1/2 cup whole wheat breadcrumbs
- 1/4 cup non-dairy milk
- 1 large egg
- 1 tsp dried parsley
- 1/2 tsp paprika
- 1 tsp Italian seasoning
- sea salt to taste
- cracked black pepper taste
- topping:
- 1/3 cup bbq sauce
- 1 tbsp dijon mustard
- 2 tbsp brown sugar
Instructions
- preheat oven to 350
- in a small skillet set to medium-low heat, add olive oil
- add garlic & onion and sauté until translucent and fragrant, about 4-5 minutes then remove from heat
- to a large mixing bowl, add turkey, egg, breadcrumbs, onion, garlic, bell pepper, worcestershire sauce, bbq sauce, parsley, sea salt, pepper, and 2 slices of diced bacon.
- mix very well! (by hand is recommended)
- place mixture in a loaf pan (or you can use a baking sheet and shape mixture into a loaf)
- spoon your sauce on top and sprinkle remaining 2 diced slices of bacon on top
- bake uncovered for 55 minutes
- Let meat rest for about 10 minutes before slicing
- garnish with fresh parsley or green onion and enjoy!
