Banana Chia Snack Muffins

Ingredients
batter
- 1.5 cups gluten-free flour blend
- 3 super ripe & spotty bananas
- 1 whole egg
- 2 tbsp coconut oil or canola oil
- 1/3 cup lactose-free or vegan greek yogurt
- 1/3 cup brown sugar
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
- 1 tbsp chia seeds
- 1/4 tsp salt
- toasted pecans (optional)
Instructions
- coat your mini baking pan with no-stick cooking spray
- to a bowl, whisk together flour, baking soda, baking powder, cinnamon, & salt
- to your mixer, add ripe bananas, yogurt, eggs, brown sugar, oil, & vanilla and blend until smooth
- stop mixer and add chia seeds and flour mixture and blend until smooth but don't overmix!
- spoon muffin mixture into pan about 1/2 full
- bake on 350° for 20-22 min and insert a toothpick in the center to ensure it comes out clean.
