the sweetest bite! a yummy,a quick, portable, wholesome, healthy snack for the kiddos.

Ingredients

  • 3 ripe bananas
  • 2 cups gluten-free 1:1 baking flour
  • 1/2 cup light brown sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 cup chia seeds
  • 2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup non-dairy milk
  • 2 tsp lemon juice
  • 1 tsp vanilla extract
  • 1/4 cup coconut oil
  • 1/4 cup pure maple syrup
  • 1/2 cup lactose-free greek yogurt

Instructions

  1. to a small bowl, add non-dairy milk and lemon juice to make buttermilk; let sit for 10 min.
  2. to your mixer, add bananas, maple syrup, brown sugar, chia seeds, yogurt, coconut oil, milk, and vanilla extract until just combined
  3. in a separate bowl, combine flour baking soda, baking powder, cinnamon, and salt and combine
  4. add dry ingredients into the wet and mix gently until just combined but be careful to not overmix.
  5. coat your mini pan with non-stick cooking spray and add a heaping tbsp to each muffin tin. I made about 52 mini muffins
  6. bake for 13-15 minutes or until an inserted toothpick comes out clean
