do this:
  1. add your cottage cheese, eggs, flour, vanilla extract, salt, and baking powder to your blender cup. blend until smooth and creamy—this makes the pancakes light and fluffy
  2. heat your griddle or pan to medium heat and lightly grease with oil or butter. pour batter straight from your blender onto the griddle in small pancake-sized portions
  3. let them cook for about 2-3 minutes per side, or until they’re golden brown and cooked through
  4. stack 'em up and top with fresh fruit, a drizzle of maple syrup, or a little dairy-free yogurt
