 - 1 cup old fashioned oats
 - 1/2 cup lactose-free cottage cheese
 - 2 large eggs
 - dash sea salt
 - 1 tsp vanilla
 
Instructions
do this:
 - add your cottage cheese, eggs, flour, vanilla extract, salt, and baking powder to your blender cup. blend until smooth and creamy—this makes the pancakes light and fluffy
 - heat your griddle or pan to medium heat and lightly grease with oil or butter. pour batter straight from your blender onto the griddle in small pancake-sized portions
 - let them cook for about 2-3 minutes per side, or until they’re golden brown and cooked through
 - stack 'em up and top with fresh fruit, a drizzle of maple syrup, or a little dairy-free yogurt
