Chocolate Chip Skillet Cookie

THE best vegan chocolate chip skillet cookie you have ever eaten. add a scoop of vanilla ice cream and get busy!
Ingredients
cookie batter
- 1 cup organic spelt flour
- 1/2 cups dairy-free chocolate chips
- 1/4 tsp pink himalayan sea salt
- 1 tsp organic vanilla
- 3/4 cup organic cane sugar
- 4 tbsp coconut oil
- 1/4 cup water
- 1/4 cup light coconut milk
- 1/2 cup honey roasted peanut butter
- 4 tbsp ground flaxseed
- 1/2 tsp baking soda
Instructions
- combine dry ingredients (flour, oats, salt, sugar, flaxseed, baking soda) together in a large bowl
- combine wet ingredients (oil, vanilla, peanut butter, water) together in a large bowl and mix
- add wet ingredients into dry ingredients and mix until just combined
- add chocolate chips and mix once more
- coat a large cast iron skillet with no stick cooking spray
- add batter to skillet and press the top of the cookie down with your finger tips into an even layer
- press a few extra chocolate chips into the top!
- bake for 25-27 min on 350 degrees
